Ginger Carrot Dressing

  cup shredded carrots
 2 inch piece of ginger, peeled and grated
 ¼ cup apple cider vinegar
 ¼ cup toasted sesame oil
 1 clove garlic
 ¼ shallot, chopped
 2 tsp honey
 2 tsp soy or coconut aminos
 2 tsp ponzu
 ¼ tsp fresh cracked black pepper

Shred the carrots and ginger using a cheese grater

Add all of the ingredients to a blender or food processor and blend until smooth
