
Chili Lime Salmon
4 salmon filets (5-6oz each)
1 tsp Kosher salt
2 tsp garlic powder
2 tsp smoked paprika
1 lime, zest of
2 tsp maple syrup
1 tbsp olive oil
Peach Salsa
1 ripe peach, diced
½ red onion, diced
½ cup cherry tomatoes, sliced
1 serrano pepper, diced (can also use jalapeño)
2 tbsp fresh cilantro, chopped
1.50 limes, juice of
½ tsp Kosher salt
Cilantro Crema
1.50 cups full-fat Greek yogurt
1 tsp Kosher salt
1 clove garlic
1 cup fresh cilantro
1 serrano pepper
splash of fresh lime juice
Chili Lime Salmon

1. Preheat oven to 500°F.
2. In a small bowl, mix salt, garlic powder, chili powder, smoked paprika, and lime zest.
3. Place salmon fillets on a parchment-lined baking sheet.
4. Rub spice mixture evenly over the salmon.
5. Drizzle with maple syrup and olive oil.
6. Bake for 12-14 minutes, until the salmon is tender and lightly caramelized.
Peach Salsa

1. Combine all ingredients in a bowl.
2. Toss gently and set aside.
