Winter Kale & Quinoa Salad
2 cups cooked organic quinoa
2 cups organic kale, finely chopped
½ organic Granny Smith apple, diced
½ organic red onion, thinly sliced
¼ cup red wine vinegar
1 tbsp honey
1 organic avocado, sliced
Dressing
2 tbsp apple cider vinegar
1 organic lemon, juice of
1 tbsp Dijon mustard
1 tbsp maple syrup
¼ cup olive oil
½ tsp crushed red pepper
½ tsp fresh cracked black pepper
½ tsp Kosher salt
Dressing

Mix everything together in a bowl and whisk until the dressing emulsifies (you will probably have extra dressing so just store in an airtight container in the refrigerator)
Kale & Quinoa Salad

to pickle the red onion, add the thinly sliced red onion to a small bowl and cover with the red wine vinegar and honey. Season with a pinch of salt and pepper and set aside at least 30 mins.

next, add the quinoa, chopped kale, apple and avocado to a large bowl

toss in about 1/2 cup of the dressing and mix well

top with picked onions
