Southwest Salmon Salad
6oz portion of salmon
⅓ tsp Kosher slat
⅛ tsp smoked paprika
¼ tsp chili powder
¼ tsp garlic powder
⅓ tsp black pepper
¼ tsp organic honey
⅓ tsp Olive oil
¼ cup heirloom cherry tomatoes, diced
½ ripe avocado, sliced
mixed greens
2 tbsp cilantro, chopped
Chili Lime Dressing
1 clove garlic, pasted w pinch of Kosher salt
1 lime, juice and zest of
1 ½ tsp organic honey
½ tsp chili powder
pinch of Kosher salt to taste
fresh cracked black pepper to taste
2 tbsp olive oil
Southwest Salmon Salad
2Place the salmon on a parchment lined baking sheet and pat dry with a paper towel
3Season the salmon with the spices and drizzle on the honey and olive oil
4Use your hand to press in the spices and honey making sure the salmon is evenly coated
5Roast at 500 for 15-17 mins for medium
6Let the salmon cool slightly then add it to a bowl with the mixed greens, heirloom tomatoes and avocado slices
7Toss everything with the Chili Lime dressing and top with fresh cilantro
Chili Lime Dressing
8Sprinkle a pinch of Kosher salt over the clove of garlic
9Using the back of your knife, press the garlic and salt back and forth until a paste is formed ( make sure there are no large chunks of garlic)
10Place the garlic paste to a bowl and add the honey, chili powder, lime zest and juice and whisk
11Slowly stream in the olive oil and whisk until emulsified, season with salt and pepper to taste
