Farmer's Market Guac
4 large ripe avocados
¼ cup shallots, finely diced
1 serrano pepper, finely diced
2 tbsp fresh cilantro, chopped
¼ cup fresh basil, chopped
¼ cup fresh squeezed lemon juice
1 ear of corn
1 ½ tsp Kosher salt
Tortilla chips or grilled tortillas

preheat the oven to 425

remove the husk and silks from the corn roast at 425 for 10 mins

add the avocados, chopped shallot, fresh herbs and Serrano pepper to a large mixing bowl

season with salt and add the lemon juice

check for seasoning, add a bit more lemon if needed and adjust salt to taste

let the corn cool when it comes out of the oven

remove the corn from the cob and gently fold into the guacamole

serve with your favorite tortilla chips or grilled tortillas
