Ingredients:
• 2 large cucumbers, thinly sliced
• 1 small shallot, thinly sliced
• 1 red Serrano pepper (or green), thinly sliced
• 2 tbsp fresh cilantro leaves
• 1 tbsp toasted sesame seeds
• 4 tbsp rice wine vinegar
• 4 tbsp Ponzu
• 1 tbsp hot sesame oil
• 1 tsp Kosher salt
• 1-2 tsp agave nectar
Instructions:
1️⃣ Combine the sliced cucumber, shallot, and Serrano pepper in a glass bowl.
2️⃣ Remove cilantro leaves from the stems and add to the bowl.
3️⃣ In a separate bowl, whisk together rice wine vinegar, Ponzu, sesame oil, salt, and agave nectar.
4️⃣ Pour the dressing over the veggies and toss.
5️⃣ Sprinkle sesame seeds, cover, and chill for at least 1 hour.
