Chipotle Lime Chicken 

Ingredients 

8 boneless skinless chicken thighs 

1 7oz can chipotle and adobo sauce, chopped 

2 cloves garlic, chopped 

The juice of one lime 

1 tsp kosher salt 

1/2 tsp pepper 

1/2 tsp dried oregano 

1/4 cup olive oil 

Directions 

Place the chicken in a glass container and season w salt, pepper and oregano 

Add the chopped garlic, chipotle and adobo sauce, lime juice and olive oil

Stir well until both sides of the chicken are coated with the marinade 

Cover and place in the refrigerator for at least 1 hour and up to overnight 

Remove the chicken from the refrigerator 30 mins before cooking

Heat 2 tablespoons of olive oil in a large skillet 

Cook the chicken for 6 minutes on medium high heat and do not disturb 

Flip the chicken, reduce the heat to medium and cook another 6 minutes ( cook in two batches if your pan is not large enough) 

Remove the Chrom the pan and let rest for 5 mins 

Garnish with cilantro and lime

Preheat the oven to 400

Place the chicken on a sheet pan and bake for 25 mins 

Baste the chicken with the juice and pan sauce before serving
