Baja Roasted Halibut w Cucumber Salad
Yields4 Servings
Baja Seasoning
1 tsp Kosher salt
½ tsp fresh cracked black pepper
1 tsp Chili powder
½ tsp thyme
½ tsp oregano
¼ tsp smoked paprika
⅛ tsp cayenne pepper
Halibut
4 Halibut portions, about 6 oz each
2 tbsp organic butter
1 lime, zest and juice
2 tbsp olive oil
Cucumber Salad
3 Persian cucumbers, sliced thin
½ red onion, sliced thin
1 Serrano pepper, sliced thin
2 limes, juice of
½ cup cup cherry tomatoes, sliced thin
1 tsp Kosher salt
¼ cup fresh cilantro, stems removed
Baja Roasted Halibut
2mix all of the spices for the Baja seasoning together until everything is incorporated
3place the fish on a parchment lined baking sheet and pat dry with a paper towel
4drizzle each piece of fish with a little olive oil
5season the fish liberally with the Baja seasoning, making sure it is well coated and the salt is evenly distributed
6top each piece of fish with 1/2 tbsp of butter and some lime zest
7roast at 500 for 12 mins for medium rare and up to 15 mins for medium
8add a squeeze of fresh lime over the top when the fish comes out of the oven
9serve over the cucumber salad
Cucumber Salad
10add the thinly sliced cucumbers, red onion, cherry tomatoes and Serrano pepper to a large bowl
11add in the lime juice, olive oil and salt and toss
12toss in the cilantro leaves and check for seasoning
13add more lime or salt if needed and refrigerate until ready to serve
