Roasted Tomatoes
2 lbs Roma or Campari tomatoes, quartered
¼ cup olive oil
5 cloves garlic, smashed
1 tsp salt
½ tsp pepper
½ tsp crushed red pepper
Yummi Chili Seasoning
5 tbsp chili powder
2 tsp kosher salt
2 tsp garlic powder
1 tsp smoked paprika
1 tsp chipotle chili powder
½ tsp fresh cracked black pepper
½ tsp cumin
½ tsp crushed red pepper
¼ tsp cayenne pepper
¼ tsp cinnamon
Chili
3 lbs organic ground beef
1 large white onion, diced
1 large jalapeno, diced
3 cloves garlic, minced
2 tbsp olive oil
1 14 oz can fire roasted tomatoes
sour cream
cheddar cheese
green onion, chopped
tortilla chips
Roasted Tomatoes
2Add the quartered tomatoes and smashed garlic to a baking dish
3Season with olive oil, salt, pepper and crushed red pepper
4Toss until the tomatoes are coated with the seasoning and olive oil
Yummi Chili Seasoning
6Add all of the spices together and mix until everything is well incorporated
7Place in a small bowl and set aside

8Add two tablespoons of olive oil to a large Dutch oven and heat over a medium flame
9When the oil is hot, add the diced onion and cook for 5 mins stirring occasionally
10When the onion begins to turn translucent, add in the diced jalapeño and minced garlic and cook for three minutes being careful not to burn the garlic
11Add in the ground beef and turn the flame to med/high
12Cook the beef about 12 minutes until it has browned
13Add in the Yummi Chili Seasoning and stir
14Continue to cook until the Roasted Tomatoes are ready and the meat is cooked through
15Add in the can of fire roasted tomatoes (juice and all) and stir
16Add in the Roasted Tomatoes (oil and all)
17Remove the large garlic cloves from the chili and continue to stir
18Reduce the heat to a simmer and cook 25-30 minutes until the liquid reduces
19To serve, top with cheddar cheese, sour cream, green onion and tortilla chips
