Preheat the oven to 425
Add the quartered tomatoes and smashed garlic to a baking dish
Season with olive oil, salt, pepper and crushed red pepper
Toss until the tomatoes are coated with the seasoning and olive oil
Bake for 30 mins
Add all of the spices together and mix until everything is well incorporated
Place in a small bowl and set aside
Add two tablespoons of olive oil to a large Dutch oven and heat over a medium flame
When the oil is hot, add the diced onion and cook for 5 mins stirring occasionally
When the onion begins to turn translucent, add in the diced jalapeño and minced garlic and cook for three minutes being careful not to burn the garlic
Add in the ground beef and turn the flame to med/high
Cook the beef about 12 minutes until it has browned
Add in the Yummi Chili Seasoning and stir
Continue to cook until the Roasted Tomatoes are ready and the meat is cooked through
Add in the can of fire roasted tomatoes (juice and all) and stir
Add in the Roasted Tomatoes (oil and all)
Remove the large garlic cloves from the chili and continue to stir
Reduce the heat to a simmer and cook 25-30 minutes until the liquid reduces
To serve, top with cheddar cheese, sour cream, green onion and tortilla chips
