Roasted Tomatoes
 2 pints baby heirloom or cherry tomatoes
 1 pint Roma tomatoes
  cup Extra virgin olive oil
 1 ½ tsp Kosher salt
 2 tsp balsamic vinegar
 6 cloves garlic
 ¼ tsp crushed red pepper
 1 cup fresh basil
Italian Chicken Cutlets
 2 Organic chicken cutlets, pounded out 1/4 inch thick
 1 ½ tsp Kosher salt
 2 tsp Italian seasoning
 1 tbsp olive oil
 16 oz Fresh mozzarella
 Fresh basil
 Fresh parm

Preheat oven to 400

Add tomatoes, garlic and basil to a baking dish

season with salt, crushed red pepper, olive oil and balsamic vinegar

toss and baked uncovered for 30 mins (stir at 15 mins)

Italian Chicken Cutlets

season both sides of the chicken cutlets with Kosher salt and Italian seasoning

heat 1 tbsp olive oil in a skillet over medium/high heat

cook the chicken cutlets 3 mins per side

remove the tomatoes from the oven

9

add the chicken cutlets to the roasted tomatoes and top with fresh mozzarella

10

broil on high for 5-7 minutes until the mozzarella is bubbly and golden brown

11

top w freshly grated Parmesan and basil
