Baja Roasted Halibut w Cucumber Salad

Baja Seasoning
 1 tsp Kosher salt
 ½ tsp fresh cracked black pepper
 1 tsp Chili powder
 ½ tsp thyme
 ½ tsp oregano
 ¼ tsp smoked paprika
  tsp cayenne pepper
Halibut
 4 Halibut portions, about 6 oz each
 2 tbsp organic butter
 1 lime, zest and juice
 2 tbsp olive oil
Cucumber Salad
 3 Persian cucumbers, sliced thin
 ½ red onion, sliced thin
 1 Serrano pepper, sliced thin
 2 limes, juice of
 ½ cup cup cherry tomatoes, sliced thin
 1 tsp Kosher salt
 ¼ cup fresh cilantro, stems removed

preheat the oven to 500

mix all of the spices for the Baja seasoning together until everything is incorporated

place the fish on a parchment lined baking sheet and pat dry with a paper towel

4

drizzle each piece of fish with a little olive oil

5

season the fish liberally with the Baja seasoning, making sure it is well coated and the salt is evenly distributed

top each piece of fish with 1/2 tbsp of butter and some lime zest

7

roast at 500 for 12 mins for medium rare and up to 15 mins for medium

8

add a squeeze of fresh lime over the top when the fish comes out of the oven

9

serve over the cucumber salad

add the thinly sliced cucumbers, red onion, cherry tomatoes and Serrano pepper to a large bowl

11

add in the lime juice, olive oil and salt and toss

12

toss in the cilantro leaves and check for seasoning

13

add more lime or salt if needed and refrigerate until ready to serve
