Whole Roasted Salmon
2 pound (skin-on) wild salmon side
1 tsp coarse Kosher salt
½ tsp fresh cracked black pepper
½ tsp garlic powder
½ tsp paprika
1 tbsp Mayonnaise
1 lemon

Preheat the oven to 500 degrees

Pat the salmon dry with a paper towel

Season the salmon with salt, pepper and garlic powder

Evenly spread the mayonnaise over the salmon

Top with the paprika and the zest of half of the lemon

Slice the lemon into thin slices

Layer the lemons on a parchment lined baking sheet

Place the salmon over the lemons and bake at 500 for 15-17 mins for medium

To serve, top with a squeeze of fresh lemon juice and fresh parsley
